Combine ground oats with the remaining oats and dry ingredients.
Add all the wet ingredients to the dry ingredients and stir to combine.
Stir in the chocolate chips and walnuts if using them.
Pour into the prepared pans.
Bake for 35-40 minutes.
Notes
This can be made as muffins. Be sure to grease the muffin tray and/or liners well. A lined, greased cake pan will also work. Adjust cooking times for these. (I haven't tested the cooking times for these)
The batter only partially fills each loaf pan. This is for more even baking.
